Anti-waste recipe – Gazpacho

Ingredients

  • 12 oz of cherry tomatoes
  • ยฝ cucumber
  • ยฝ onion
  • 1 yellow pepper
  • 1 red pepper
  • 2 slices stale bread
  • 2 tablespoons of apple cider vinegar
  • 2 glasses of water
  • Evo oil
  • Salt
  • Pepper

Directions

Chop the cherry tomatoes, cucumbers, peppers and onion. Put them into a mixer and add a pinch of salt and pepper, a glass of water and ยฝ red pepper and ยฝ yellow pepper. Also add the bread previously soaked in water and vinegar. Mix all the ingredients until you get a puree. Serve the Gazpacho by adding a drizzle of raw oil and diced peppers not previously used.
