Pumpkin parmigiana

Anti-waste Recipe: Pumpkin Parmigiana


  • 35 oz pumpkin
  • 14 oz mozzarella cheese
  • 5 oz cooked ham
  • Evo oil
  • Parmesan cheese
  • Breadcrumbs
  • Flour
  • Parsley
  • Salt


Clean the pumpkin and cut it into thin slices. Flour them lightly and place them in our rectangular aluminium foil container. Add the slices of mozzarella cheese and ham. A pinch of salt and parmesan. Pour a drizzle of oil and the chopped parsley. Repeat the operation until you reach the end of the tray. Cover with abundant breadcrumbs and bake in a preheated static oven at 356 ยฐ F for about 30 minutes. When the pumpkin has softened, set the grill function and cook for another 10 minutes. Remove the Parmigiana from the oven and serve still hot.
