Anti-waste recipe – Vegetable Loaf
Ingredients
- 14 oz potatoes
- 14 oz courgettes
- 10,5 oz carrots
- 1 onion
- 1 leek
- 2 eggs
- 7 oz scamorza cheese
- 5 oz breadcrumbs
- 2 oz grated cheese
- 5 tablespoons evo oil
- Salt
Directions
Wash, clean and cut into cubes all vegetables. Fry the onion in a large pan with evo oil and add the potatoes with the leek first and after a few minutes the carrots and courgettes. Salt to your liking and cover the pan with a lid. Remove the vegetables from the heat while still al dente and pour them into a bowl adding the chopped scamorza cheese, eggs, breadcrumbs and grated cheese. Mix all the ingredients until they’re completely dry.
Add more breadcrumbs to the base of our Smoothwall aluminium tray and pour all the mixture. Cover the surface with plenty of evo oil and put it a static preheated oven at 356ยฐ F for about 25 minutes. Serve the vegetable loaf still warm.
