Anti-waste Recipe: Zucchini Plumcake
- 1 ¾ cup of white flour
- 3 eggs
- ½ cup milk
- ½ cup seed oil
- 0,5 oz yeast for savory pies
- 10,5 oz zucchini
- 7 oz smoked cheese / provolone
- 10 mint leaves (of your choice)
Wash and cut the zucchini into strips or washers. In a bowl, combine and whisk the eggs, milk, oil. Add the flour and baking powder a little at a time. Season with parmesan and salt. Continue to turn and when you have obtained a homogeneous mixture, also add the zucchini and the smoked cheese cut into cubes. If you like, flavor with mint.
Stir again and pour the mixture into our rectangular aluminium tray (help yourself with a spoon or spatula). Bake in a preheated oven at 356°F for about 50 minutes. Test the toothpick to check the cooking. Once ready, wait for it to cool slightly before taking it out of the pan. Serve the Zucchini Plumcake warm.
