
Austria – Linzer Torte Recipe
Ingredients
- 5 oz butter
- ยฝ cup white flour
- ยพ cup almond flour
- ยพ cup sugar
- 1 egg
- ยฝ teaspoon cinnamon
- ยฝ teaspoon nutmeg
- 2 teaspoons yeast
- 1 tablespoon cocoa powder
- Grated lemon rind
- Redcurrant jam for coating
- Egg and milk for coating
- Flaked almonds (to decorate)
Directions
In a large bowl put the butter cut into small pieces, add sugar and start working them with your hands. Add all the other ingredients, except the jam, and work the mixture quickly until it becomes a smooth homogeneous dough. Cover it with a wrap and put it in the fridge for about 1 hour.
With the rolling pin spread the 2/3 of the dough. Put it into the pan and coat with the jam leaving about 1 cm all round for the edge. Shape the remaining dough into several small rolls for the lattice and one thicker roll for the edge.
Baking
Coat the dough with the egg beaten with the milk. Sprinkle with flaked almonds and bake in the pre-heated oven (356F) for 35-40 minutes. Leave to cool and dust with icing sugar.
