Deep Freezer – Lemon Balls Recipe
- 2 lemons
- 250 g ricotta cheese
- 160 g Pavesini / breadsticks
- ½ vanilla essence (vial)
- 100 g Powdered sugar
Sift the ricotta cheese, put it in a bowl adding the powdered sugar, the lemon juice and zest, the vanilla essence. Mix ingredients until they are thoroughly combined and add 80 g of minced Pavesini/breadsticks. Cover with a film and let it rest for about 30 minutes.
Lightly wet your hands and form small balls. Dip each lemon ball in the remaining minced Pavesini/breadsticks. Place them on our lacquered Smoothwall aluminium contaier and place in the freezer to firm up for about 1 hour.
