Germany – Frankfurter Kranz Recipe

Ingredients for the cream

  • 2 ยฝ cups milk
  • 3 egg yolks
  • 1/2 cup granulated sugar
  • 4 tablespoons corn starch
  • 1 teaspoon ย of vanilla extract
  • 9 oz butter
  • 6 tablespoons blackberry or red fruits jam

Ingredients for the cake

  • 6 eggs
  • 9 oz butter
  • 1 cup granulated sugar
  • 2 ยฝ cup flour
  • ยฝ oz yeast
  • 1 teaspoon ย of vanilla extract

Ingredients for sprinkles

  • 1 cup chopped hazelnut
  • 1 cup sugar
  • 1 oz butter
  • 8 candied cherries


In a bowl heat the milk until it starts to bubble. Use an electric hand mixer and mix soft eggs with sugar butter with sugar and corn starch. Slowly add milk and mix all ingredients until well combined. Add vanilla extract and cover it with a plastic wrap. Wait for 15 minutes.

Remove the cream to another bowl and add butter to the mixing bowl. Cover with a plastic wrap and put it in the fridge for 2 hours.

In the meanwhile caramelize hazelnuts toasting them in a pan with butter and sugar. Transfer the caramelized hazelnuts to a baking sheet lined with parchment paper.

Now, use an electric hand mixer and mix butter, sugar and vanilla. Add 6 eggs, flour and yeast.


Put the dough in our Happy Day container and bake it in the oven to 347F (test a cake for doneness with a toothpick).

Let the cake cool. Then, cut the cake horizontally into three pieces. Pass the jam through a sieve and spread it on top of the bottom layer. Spread a layer of butter cream on top of the jam using a spatula. Spread the buttercream on the cake and sprinkle the caramelize hazelnuts. Finally place the cherries on top of the buttercream.
