Liguria – Focaccia Recipe
1/2 cup water
4 teaspoons extra virgin olive oil
½ oz yeast
1½ cup flour
Mix together water, yeast and extra virgin olive oil. Add ¾ cup flour and salt. Stir with your hand or a food mixer for 10/15 minutes until the dough becomes elastic. Put it on a surface and cover with a cling film and a towel. Let mixture sit for 30 minutes. Tip the dough onto an oiled work surface and continue kneading. Cover and leave to rise for 30 minutes.
Stretch the dough into a flat disc. Use a rolling pin to do this. Put the disc in a Happy Day aluminium container. Drizzle the loaves with oil, sprinkle with fine sea salt then let sit for 30 minutes in the oven with the pilot light. Pour a combination of water and oil on the dough and let it rise. Preheat the oven to 425F. Bake in the oven for 14 minutes. When it’s done, cut the focaccia into strips and serve.
