Italian Villages – Patty Of Anchovies Recipe

Ingredients โ€“ 6 serves

  • 1 kg fresh anchovies
  • 50 g breadcrumbs
  • 1 glass of vinegar
  • 1 sprig of parsley
  • 3 cloves of garlic
  • pecorino cheese and pistachio
  • extra virgin olive oil
  • Salt
  • lemon


Clean the anchovies by removing the head and entrails and open them as a book by removing the bone. Marinade them in vinegar for about an hour. Meanwhile, in a large bowl, chop the parsley and garlic; add the breadcrumbs, a pinch of salt and a spoonful of pecorino and pistachio if you want to make the mixture more delicious. Drain the anchovies and cover them with a part of the previously prepared breading. Arrange them in a circular pattern in our aluminium container. Place the remaining breading in the center of the tray and close whit the same anchovies, folding them inside. Add a drizzle of oil and bake in a preheated oven at 340ยฐF for about 20 minutes. Serve the patty with a squeeze of fresh lemon.
