Italian Villages – Pinza Recipe
- 2 cups white flour
- 1 cup Sugar
- 3 eggs
- 3,5 teaspoons baking powder
- 3,5 oz butter at room temperature
- 1 Vanillin sachet
- Lemon zest
- 1 jar plum jam
Mix together flour, sugar, baking powder, grated lemon zest and vanillin in a bowl. Then, pour onto a pastry board and add the eggs, butter and a pinch of salt to the center of the mixture. Mix all the ingredients with your hands until you get a homogeneous dough. Roll it out with a lightly floured rolling pin and create a rectangle on which to spread the jam. Roll the dough on itself and seal the ends well so that the filling doesn’t come out during cooking.
Put the roll in our wrinklewall foil container and sprinkle with sugar. Bake for 30 minutes at 356° F. Wait for it to cool down and cut the pinza into slices before serving.
