Microwave Oven – Stuffed Tomatoes Recipe

Ingredients for 3 stuffed tomatoes:

  • 1/3 cup couscous
  • Water
  • 3 tomatoes
  • 2½ oz tuna
  • 6 capers
  • 1 boiled egg
  • Extra virgin olive oil
  • Salt
  • Pepper

Directions

Wash and clean the tomatoes, the cut off the top of them. With a help of a spoon, scoop out the seeds and pulp to get a cavity. Now to prepare the filling for the tomatoes, heat the couscous and chop the capers. In a medium sized bowl add the cous cous, the capers, the tomatoes’ pulp, the tuna, the boiled egg, salt, pepper and a teaspoon of extra virgin olive oil. Mix all the ingredients.

Baking

Now with a help of a spoon, carefully stuff this filling in the tomatoes and cover them with the top. Bake the tomatoes in a combi-microwave oven at 600 W for about 10 minutes into our lacquered aluminium containers. Let the tomatoes rest and then, serve them at room temperature.
