France – Petit Gateau Recipe


  •  5 oz dark chocolate
  • 5 oz butter
  • 2/3 cup sugar
  • 3 eggs
  • 1 tablespoon flour
  • Salt
  • Cocoa powder


Cook in a bain-marie dark chocolate in pieces, butter and sugar. Whisk until you have something resembling a liquid dough. Put it in a large bowl and add the eggs, the flour and a pinch of salt. Beat the mixture until almost doubled its size and has a firm consistency.


Put cocoa powder in our Flan aluminium containers. Pour the mixture into the tray almost to the top (leave 1cm or so, just for precaution of spelling the dough) and put the flan containers into the freezer for 2 hours. Bake the petit gateau in a pre-heated oven at 430° F for about 15 minutes. Use a toothpick to determinate if they’re ready!
