Puglia – Focaccia Recipe

Ingredients

  • 1 ½ cup flour
  • 1 ½ cup durum wheat flour
  • 1 oz brewer’s yeast
  • 4 oz potatoes
  • 2 cups water
  • Salt
  • Extra-virgin olive Oil

For the filling

  • Cherry tomatoes
  • Olives
  • Oregano
  • Salt
  • Extra-virgin olive Oil

Direction

Cover the potatoes with enough hot water. Peel them and use a potato ricer. In a bowl mix the flour and the durum wheat flour with the brewer’s yeast. Add mashed potatoes and salt. Mix all the ingredients with some water and oil. Knead the dough and let it rest for about 3 hours.

Baking

Roll out the dough in our Happy Day aluminium tray. Sprinkle tomatoes and olives on focaccia. Pour oil and add salt and oregano. Preheat the oven to 428F and bake the focaccia for about 30-35 minutes.
