Fridge – Recipe of Savoury cheesecake with zucchini and tomatoes
- 150 gr unsalted crackers
- 100 gr melted butter
- 300 gr soft cheese
- 200 gr zucchini
- 50 ml cooking cream
- 4 gr gelatin sheets
- 1 leek
- 400 gr cherry tomatoes
- 1 clove of garlic
- Basil leaves
- Extra virgin olive oil
Blend the unsalted crackers finely and add the melted butter mixing all the ingredients. Add salt and pepper to taste. Pour the mixture into the Happy Day aluminum container, mash it well making the edges go up and put it in the fridge.
Soft the gelatin sheets in cold water for about 10 minutes. In the meanwhile wash the leek, cut it into thin slices and cook it for 3 or 4 minutes. Let it cool.
Wash the zucchini, dry them and cut them into julienne strips. Heat the cream and add the gelatin. Mix well to combine the ingredients.
In a bowl mix the cheese, the leek, the zucchini and the cooking cream together. Add salt and pepper. Pour the ingredients in the Happy Day®, level the surface and put in the fridge for at least 4 hours.
Wash the cherry tomatoes and fry them with oil, garlic, basil and salt. Decorate the cheesecake with thin slices of zucchini and serve with fried cherry tomatoes.
