Sicily – Scacciata with cheese and anchovies recipe
- 400ml of water
- 3 ½ cup flour
- 1 tablespoon yeast
- 1 tablespoon extra-virgin olive oil
For the filling
- 1lb cheese
- 5/6 anchovies
Sift the flour and add yeast crumbled, water, salt and a tablespoon of extra-virgin olive oil. Stir with a wooden spoon until you form a rough dough. Transfer the dough to a work surface and knead until it is smooth and elastic. Cover with cling film and rest for a couple of hours, until the dough doubles in size.
Divide the dough into 2 and roll 1 piece. Transfer the rolled dough into our Happy Day aluminium container and spread slices of cheese, anchovies and pepper. Roll the second piece of dough and put it on the pastry. Pre-heat the oven to 420F for about 40 minutes. Let it cool and serve it.
