Summer Recipe – Stuffed Anchovies

Ingredients (4 serves)

  • 30 anchovies
  • 100 gr pine nuts
  • 30 gr sesame
  • 30 gr sage leaves
  • 30 gr basil leaves
  • 3 anchovies in oil
  • 2 eggs
  • Flour
  • Breadcrumbs
  • Salt
  • 2 tablespoons of extra virgin olive oil
  • Oil for frying (your choice)
  • 3 cups Greek yogurt


Blend in a mixer the pine nuts, sage, basil, anchovies, a tablespoon of breadcrumbs, 2 tablespoons of oil and a pinch of salt. Then, clean the anchovies by removing the head and eviscerating the entrails. Open them up like a book, remove the bones and, after washing them, spread a little of the sauce previously prepared before closing them. Put them in the flour, then in the beaten egg and fry them in hot oil for about 2 minutes. Meanwhile, toast the sesame in a hot pan and pound it in a mortar adding a pinch of salt. Add to the Greek yogurt and mix all the ingredients.

Serve the anchovies on our aluminum plate and dip them in the yogurt before enjoying them, drinking a glass of white wine or a beer.
