Summer Recipes – Exotic Pudding
Ingredients (4 serves)
- 7 cups of coconut milk
- 1 ripe mango
- 2-3 tablespoons of brown sugar
- 6 g of isinglass
- Juice of 1 lime
- 1 lime to decorate
Directions
Peel and cut the mango to blend until pureed. Add coconut milk, lime juice and brown sugar to mix all ingredients. Meanwhile, put the isinglass in the double boiler and let it come. Pour all the previously prepared ingredients into a saucepan, turn the heat to low and add the squeezed isinglass. Turn the mixture until it begins to boil. Once the isinglass has melted, pour everything into four aluminum flan containers and place them in the refrigerator for at least 4 hours. Then, turn each tray upside down in one of our dessert aluminum plates, decorate with a slice of lime and serve.
