
Summer Recipes – Salmon Rolls
Ingredients (4 serves)
- 4 slices of salmon carpaccio
- 2 slices of sandwich bread
- 1 orange
- 2 tablespoons of capers
- 1 tablespoon of shelled pistachios
- 2 tufts of fennel
- Evo oil
- Salt
- Pepper
Directions
Load sandwich bread in a blender and put the crumbs in a bowl. Then, also chop the capers, rinsed and dried, the pistachios and the fennel (leave some capers and whole pistachios to decorate). Add to the bread bowl and combine with orange juice, salt and pepper. Mix all ingredients and set aside.
Baking
Spread the slices of salmon carpaccio and fill them with the mix made previously. Roll them up and shape them into rolls. Cook for about 10 minutes in a pan with a drizzle of oil, being careful to turn the rolls a couple of times to brown all sides. Once cooked, serve the salmon rolls hot by adding capers, pistachios and fennel to decorate.
