Traditional Oven – Pizzas Recipe

Ingredients for the dough (10 pizzas)

  • 4 cup white flour
  • 1 ยฝ cups water
  • 0.2 oz brewer’s yeast
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon of sugar
  • Salt

Ingredients for the sauce

  • 9 oz tomatoes
  • 7 oz mozzarella cheese
  • 1 clove of shallot
  • 1 glass of water
  • Salt
  • Oil evo


Put the flour in a bowl leaving a space in the center. In a glass, dissolve the yeast in water at room temperature and mix with the sugar. Pour the water into the center of the bowl and start kneading, adding the oil and salt. Transfer the dough to a flat surface and continue to work until you obtain a smooth and homogeneous dough. Place it in the bowl, make a cross cut and cover it with a towel. Let it rise for at least 3 hours in the oven turned off with the light on.

In the meantime, prepare the sauce. Pour the oil into a pan and fry the shallot. Add the peeled tomatoes, salt and a glass of water. Cook for 10 minutes and turn off. The sauce should not be dry as it will finish cooking in the oven.

Once the leavening hours have passed, divide the dough into 10 balls. Using a rolling pin, roll them out and place them on an aluminum baking tray lined with baking paper. Let it rise for another hour. Then, pour two tablespoons of sauce onto each pizza and bake at 392ยฐ F for about 10/15 minutes. Add the mozzarella cheese cut into cubes and put back in the oven for another 5 minutes.

Pizzas are excellent to serve freshly cooked or can be eaten at a later time. Just heat them in our AS221000 aluminium container.
